Video #1: Chipotle Barley Soup. Vitamin and fiber-rich barley reduces insulin response in diabetics. Barley is a whole grain rich in the soluble fiber called beta-glucan, which can help lower cholesterol. For a vegetarian version, substitute vegetable broth for the beef broth.
